端午节前夕回娘家裹粽子,刚巧爸爸也休假没做工,家里就热闹许多。一早就和父母去一家老字号的茶餐室喝早茶,吃得饱饱的,回家就可立即开工裹粽子。每次裹粽子时忙起来,连午餐都没时间吃,大多数都等到第一轮的粽子熟了才吃。
爸爸一边帮忙搬锅子和煤气桶,一边和我们闲聊讲以前他小时候的趣事。爸爸还说婆婆是当时在邻居们中是很出名裹粽子的,一到端午节,邻居们会预约婆婆去他们家帮忙裹粽子。
由于妈妈一早就把材料准备了,我也没机会去测量每一样材料,所以就不上食谱了。这一次裹的粽子大约有一百二十个左右,用了八公斤的糯米。

将香菇用清水浸泡至软,沥干水,去蒂切厚片,大朵的切5片,小朵的切3片就好了。 每一个粽子要放一朵的香菇,所以准备材料的时候要大约算一算。 |

妈妈多数都会在粽子里加入了咸鸭蛋。将咸鸭蛋的黑色外层洗干净,敲开蛋壳,把蛋黄取出,蛋白不要,将蛋黄放在清水下清洗,把依附在蛋黄的蛋白清洗干净。这里有三十八颗的咸蛋黄。 |

切了片的香菇用蚝油,胡椒粉和葱油酥炒香。曾经有一年的香菇没切片,整朵地放入粽子中,出来的口感令人失望,香菇的味太强,和其它的配料不搭配,所以香菇一定要切片才好吃。妈妈准备的香菇有一百三十朵。 |
