黄姜鸡饭 Chicken Nasi Briyani

每次逛书局时都会买些食谱书回来,常常买了后都没尝试书里的食谱,不过当烦恼不知要煮什么当晚餐时,食谱书就会派上用场。老公喜欢吃黄姜鸡饭,刚好我从食谱书上看到了做法,就决定把这食谱列进这星期的晚餐餐单里。












黄姜鸡饭除了黄姜饭,当然还少不了黄姜炸鸡啦!





茴香,月桂叶,豆蔻,丁香,肉桂






黄姜鸡饭 Chicken Nasi Briyani

(食谱参考Sino Malaysia Flavours, pg.91,做少许更改)

材料:
Basmati米 1 1/2杯
洋葱 1/2粒(切片)

材料A:
豆蔻 2粒 [Cardamoms]
丁香 2粒 [Cloves]
茴香 1/4茶匙 [Cumin Seeds]
肉桂 1支 [Cinnamon]
月桂叶 1片 [Bay Leaf]
牛油 1汤匙
食油 2汤匙

材料B:
优格 1/4杯
盐 1/2茶匙
水 1 1/2杯
黄姜粉 1茶匙

配料:
葡萄干 1/4杯
炸腰果 1/3杯
切碎芫茜叶 1/4杯
炸葱片 1/4杯

做法:
1. 烧热牛油和油,将材料A炒香1分钟。加入洋葱片,炒至浅褐色。
2. 加入白米拌匀,然后转移至电饭锅内。加入材料B,将饭煮熟。配上配料和马来炸黄姜鸡食用。

Chicken Nasi Briyani


Ingredient:
1 1/2 cup Basmati rice
1/2 onion (sliced)

Ingredient A:
2 Cardamoms
2 Cloves
1/4 tsp Cumin Seeds
1 stick Cinnamon
1 piece Bay Leaf
1 tbsp butter
2 tbsp oil

Ingredient B:
1/4 cup yoghurt
1 tsp salt
1 1/2 cup water
1 tsp turmeric powder

Garnishing:
1/4 cup raisins
1/3 cup deep-fried cashew nuts
1/4 cup chopped coriander leaves
1/4 cup crisp shallot slices

Method:
1. Heat up butter and oil, stir-fry Ingredients A for a minute. Add onion slices and fry until light brown.
2. Mix in rice and stir well, transfer the rice to rice cooker. Add Ingredients B and set to cook. Serve with garnishing and Malay Style Deep-Fried Turmeric Chicken.
