椰香黄梨三明治 & 椰香面包干Coconut Pineapple Sandwiches & Coconut Sugar Rusks (空气炸锅版 / Air Fryer Version)

椰子油除了可以用来煮食和直接饮用,用于烘焙或用来涂抹于面包都很适合。液体状的椰子油要涂抹于面包当三明治就有点困难,不过如果将椰子油放入冰箱冷藏让其凝固,就会比价容易涂抹于面包。椰子油的温度只要在24度或以下就会开始凝固,所以有时我们从超市或商店买的椰子油是白色凝固状的,但当拿回家放在室温一下子后椰子油就会开始溶化,变成透明的液体状。凝固的椰子油可以用来代替牛油,除了可以涂抹在面包上,吃松饼或格子松饼时加入一起吃也不错。椰子油有特殊的香味,加入在甜点里一起吃会让食物的香味更上一层,所以将一罐椰子油冷藏在冰箱里,需要时随时都可以派上用场。


我很喜欢椰子和黄梨,也喜欢这两个食材配搭一起的味道,刚好家里还有自制的黄梨酱,所以就做了椰香黄梨三明治来当下午茶。用了三明治模具来切割面包,剩下的面包皮也蛮多的,我不想浪费丢弃这些面包皮,所以就顺手加了些椰子油和糖混合,然后放入Air Fryer里烘一烘,把不要了的面包皮摇身一变,变成美味的椰香面包干。椰香面包干又香又脆,当零嘴非常适合,和小时候吃的Roti Kok差不多一样,只不过这个版本是用了比较健康的椰子油和原蔗糖来做的。












凝固的椰子油 Solidified coconut oil












椰香黄梨三明治

材料:
全麦面包 4片
黄梨酱 3汤匙(自制或市售)
凝固椰子油 适量(食谱请往下看)

做法:
1. 把一些凝固的椰子油涂抹于面包的两面。
2. 把一片面包放在占板上,将1 1/2汤匙的黄梨酱涂抹于面包中心。把另一片面包盖上。一直重复做法,直到用完所有面包。
3. 把面包放入微波炉里加热30秒,让面包软化,方便将面包封边及切割。
4. 把四方形的三明治模具放在面包上,用力压以封边及切割面包成口袋三明治。
5. 把空气炸锅预热至170°C。将三明治放在空气炸锅的烤盘里,炸3分钟或至金黄色即可。用利刀把三明治切半成长方形即可享用。

如何准备凝固的椰子油
1. 在一个玻璃罐子里装入适量的椰子油,盖好收入冰箱冷藏至凝固。如果凝固的椰子油太硬,难涂抹于面包,你可以从冰箱取出,放置在室温一下子,让其软化。

Coconut Pineapple Sandwiches

Ingredients:
4 slices of wholemeal bread
3 tbsp pineapple jam (Homemade or store bought)
Some solidified coconut oil (please refer below for the recipe)

Method:
1. Spread some solidifed coconut oil on both sides of bread.
2. Place 1 slice of bread on a cutting board, spread 1 1/2 tbsp of pineapple jam at the center, then top with another slice of bread. Repeat until all breads are used up.
3. Microwave the breads for 30 seconds, this is to warm and soften the bread so that the edges of the breads will seal easily.
4. Put the square sandwich cutter on top of the breads, press hard to cut out and seal off the edges.
5. Preheat air fryer to 170°C. Place the sandwiches on the grill pan and air fry for 3 minutes or until golden brown. Use a sharp knife to cut the sandwiches into half to form rectangles, then arrange on serving plate. Serve immediately.

To make solidified coconut oil:
1. In a jar, add the desired amount of liquid coconut oil. Cover the jar and chill it in the refrigerator until the coconut become solid. If the solidified coconut oil is too hard to spread, you can take it out from refrigerator and leave it in room temperature for a while to let it soften.


Servings: 2 pocket sandwiches











椰香面包干

材料:
面包皮 150克
有机纯椰子油 2汤匙
有机原蔗糖 1汤匙

做法:
1. 将面包皮切成条装。在一个碗里混合面包皮、椰子油和糖,混合至面包皮都沾上糖。
2. 把空气炸锅预热至170°C。将面包皮铺排在空气炸锅的烤盘里,炸8-10分钟或至香脆及干。


Coconut Sugar Rusks

Ingredients:
150 g bread crust
2 tbsp organic extra virgin coconut oil
1 tbsp organic raw cane sugar

Method:
1. Cut bread crusts into long strips. In a mixing bowl, combine bread crusts, coconut oil and sugar.  mix until the bread crusts are coated with sugar.
2. Preheat air fryer to 170°C. Arrange the bread crusts on air fryer grill pan and air fry for 8-10 minutes or until crispy and dry.

美禄三明治 Milo Sandwiches

美禄除了可以拿来准备不同的饮料外原来还可以拿来做三明治,看到了Roti n Rice的食谱让我很想试。美禄三明治的味道是一甜一咸的,甜的是加了甜炼奶的,而咸的是加了牛油的。美禄三明治再加上咖啡美禄就成了我今天的简单午餐。


































美禄三明治

(食谱参考Roti n Rice)

材料:
白面包 4片
牛油 1汤匙
炼奶 2茶匙
美禄粉 2汤匙

做法:
1. 在两片面包上抹上牛油,而另两片则抹上炼奶。

2. 撒上一汤匙的美禄粉在其中一片抹上牛油的面包上,然后再把另一片抹上牛油的面包盖上。抹上炼奶的面包也是同样的做法。

3. 用利刀把面包边切掉,然后将三明治切半成长方形即可享用。




Milo Sandwiches

(Recipe adapted from Roti n Rice)

Ingredients
4 slices of white bread
1 tbsp butter
2 tsp sweetened condensed milk
2 tbsp Milo powder

Method:
1. Butter the 2 slices of bread and spread sweetened condensed milk on the remaining 2 slices.

2. Spread a tablespoon of Milo on 1 slice of buttered bread. Sandwich with the other slice of buttered bread. Repeat with bread spread with condensed milk.

3. Slice off the crust on all sided with a very sharp knife. Cut the sandwich into half to form rectangles. Serve immediately.

培根生菜番茄三明治 Bacon, Lettuce and Tomato Sandwich

期待已久的培根生菜番茄三明治终于在我家上桌了!美好的一天应该从一份丰富的早餐开始,色彩缤纷的柑橘排毒水配搭厚厚的BLT三明治,单是颜色已让人有视觉上的享受,感觉就像看到温暖的太阳和青青的草原和大自然。培根和美乃滋虽然让人吃了很有罪恶感,不过配搭上生菜和番茄就变得健康多了。生菜和番茄是冰箱里常有的蔬菜,每个星期都会进货,由于现在晚餐时的蔬菜和水果的摄取量减少了,我常常得想办法补充回,所以有时炒面或饭或者是做吞拿鱼三明治是我也爱加些生菜和番茄一起吃。


每次到西餐厅老公总爱点BLT三明治,不过我总是会提醒他BLT的意思,即Bacon,Lettuce和Tomato的简称,由于一般西餐厅都是卖牛肉的,而老公本身也不吃牛肉,虽然是点了加了鸡肉块的BLT三明治,不过每次都得交待不要Bacon的BLT,唉,没了Bacon,BLT还有什么意思呢,最多只能算是鸡肉三明治而已,所以要吃BLT三明治在家自己做是最好的。面包方面我选择用较硬型的,烘好后面包会比较酥脆,而且搽了美乃滋也不怕会变得软塌塌。一条Batard面包可做成两人份,做了一份给自己,另一份给老公,大大一份的培根生菜番茄三明治,吃了真的很有满足感。


















培根生菜番茄三明治


材料:
Batard 面包 1条
培根 8片
番茄 1粒(切片)
生菜 4片 (我用綠珊瑚和紅珊瑚生菜)
美乃滋 4汤匙
牛油 3汤匙
黑胡椒 适量

做法:
1. 烧热平底锅,放入培根,以中火煎至酥脆,盛出备用。
2. 面包横切半,切面向上放在烤盘上,抹上牛油,放入烤箱烘至金黄色。
3. 在面包的切面上抹上美乃滋,撒上少许黑胡椒。取其中一半的面包(底部那一半),然后将生菜铺在面包上,接着再铺排上番茄片和培根,最后盖上另一半面包,轻轻向下压,切成两份即可享用。


份量:2人份




Bacon, Lettuce and Tomato Sandwich


Ingredients:
1 Batard bread
8 slices streaky bacon
1 tomato, sliced
4 leaves lettuce (I used Green & Red Coral Lettuce)
4 tbsp mayonnaise
3 tbsp butter
Ground black pepper, to taste

Methods:
1. In a large skillet, cook bacon over medium heat until crispy. Dish out and set aside.

2. Halve the batard lengthwise. Put the batard on the baking tray, cut side up, then spread with butter. Put in the oven and broil until golden brown.

3. Spread the mayonnaise on the cut side of batard and season with some black pepper. Layer the lettuce on the bottom half of the batard. Then top with tomato slices and bacon. Place the top half of the batard on the sandwich, press down and cut in two. Serve immediately.

鮪魚沙拉可頌三明治 Tuna Salad Croissant Sandwich

在家也可以轻轻松松自己做鮪魚沙拉可頌三明治,简单美味又有营养的早餐。










鮪魚沙拉可頌三明治  Tuna Salad Croissant Sandwich

材料﹕
可頌面包 2个 [Croissant]
罐头鮪魚 1罐
洋葱 1/4颗
西芹 1/2条
檸檬汁 2湯匙
蛋黃醬 2湯匙
芥末 1湯匙
黑胡椒 适量
盐 适量
生菜 1片
番茄 2片


做法﹕
1. 将罐头鲔鱼里的水去掉,然后把鲔鱼肉块弄散,再把洋葱和西芹切成幼细备用。将鲔鱼,洋葱,西芹,柠檬汁,蛋黄酱和芥末放在一个碗里混合均匀,再加黑胡椒和盐调味即可。

2. 将可颂面切个开口但不可切断,再把面包放入烤箱里稍微烤热。将面包切口稍微打开,把生菜和番茄片放入,再把鲔鱼沙拉放入,填满切口即可。
