香辣肉碎茄子 Spicy Eggplant with Minced Pork
材料:
茄子 1条(约160克,将茄子切2寸长段,再分成4瓣)
猪肉碎 100克
洋葱 1/2颗 (切片)
蒜头 2瓣 (剁碎)
青葱 1根 (切粒)
调味料:
虾米辣椒 1汤匙
豆瓣酱 1汤匙
酱油 1/2汤匙
做法:
1. 烧热锅放入油,把油烧热后将茄子下锅泡一泡油,然后捞起茄子沥干油备用。
2. 将多余的油盛起,锅里只留下少许油,把蒜头和洋葱爆香。
3. 加入肉碎继续拌炒,把肉炒至变白,然后加入豆瓣酱炒香。
4. 把泡过油的茄子加入拌炒,加入虾米辣椒和酱油调味,最后撒上葱花拌炒一下即可。
