这新加坡水果啰喏里的特别之处就是加入了姜花,所以吃起来会有阵独特的香味,食谱里的花生碎也是蛮多的,不但提高了啰喏整体的香味,也为啰喏添加多一些脆脆的口感。嘴馋的我准备了双份的食谱,随时要吃啰喏只需拌一拌就可以了!
新加坡水果啰喏
(食谱参考Singapore Local Favourites)
材料:
黄梨 100克(去皮)
沙葛 100克(去皮)
黄瓜 100克
豆腐卜 50克
油条 50克
姜花 1茶匙(切幼细)
烤香花生 150克(磨碎)
豆芽 50克(川烫)
酱料:
虾膏 4汤匙
青柠汁 1 1/2汤匙
青柠皮茸 半汤匙(没放)
糖 5汤匙(我放3汤匙)
红辣椒 适量(研磨成糊状)
做法:
1. 将黄梨,沙葛,黄瓜,豆腐卜和油条切成小块状。
2. 在一个大的碗里放入姜花,3/4的花生碎和所有的酱料,搅拌均匀。然后再加入黄梨,沙葛,黄瓜,豆腐卜和豆芽,混合至均匀,让所有材料沾上酱料即可。
3. 把搅拌好的啰喏盛碟,加入油条和剩下的花生碎即可食用。
Singapore Chinese Rojak
(食谱参考Singapore Local Favourites)
Ingredients :
100g pineapple (rind removed)
100g yam bean (peeled)
100g cucumber
50g bean curd puffs
50g dough fritters
1 tsp red ginger plant bud (bunga siantan - shredded)
150g roasted peanuts (ground)
50g bean sprouts (scalded)
Sauce:
4 tbsp prawn paste
1.5 tbsp lime juice
1/2 tbsp lime rind (I omitted)
5 tbsp sugar (I used only 3tbsp)
some fresh chilies (ground finely)
Method :
1. Cut pineapple, yam bean, cucumber, bean curd puffs and dough fritters into pieces.
2. Mix red ginger plant bud, 3/4 of the ground peanuts and all Sauce ingredients in large bowl. Add pineapple, yam bean, cucumber, bean curd puffs and bean sprouts. Toss and mix well till ingredients are well-coated with sauce.
3. Transfer to serving dish. Top with dough fritters and remaining ground peanuts. Serve.
