冬荫黄梨炒饭 Tom Yum Pineapple Fried Rice

等了整个星期,终于抽出时间了,煮了自己喜欢的冬荫黄梨炒饭,这个是冬荫炒饭和泰式黄梨炒饭的结合版。以前在巴生工作时常会到附近的马来档吃午餐,冬荫炒饭是同事们常会点的炒饭之一,档主都会放入疯柑叶一起炒来增加炒饭的香味。之前常煮泰国菜,剩下的疯柑叶都不知道要怎样处理,突然就想起了这个炒饭,试炒了几次,觉得很不错,不过每次炒都是用家里冰箱剩下的蔬菜,这么马马虎虎的炒饭当然不能在这里上菜,所以就加了黄梨,腰果和葡萄干一起炒。腰果和葡萄干是特地买回来,准备要煮黄梨炒饭时用的,之前是打算参加AFF-Thailand的活动,所有材料准备好了才发现没有黄梨,每次初一十五家里都会用黄梨来拜神,怎知刚巧家里那天用其他水果来拜,临时找不到黄梨所以就放弃了。















我的腰果炸过度了,其实一转金黄色我就捞起,
不过没想到温度还在,腰果的颜色渐渐变深褐色了。


开动了~!很喜欢带酸甜的黄梨~


 买了两粒黄梨,炒饭我用Pineapple Josapine(左),而另一粒Pineapple Morris(右)我用来做了黄梨奶酥







冬荫黄梨炒饭 Tom Yum Pineapple Fried Rice

材料:
冷饭 2杯(弄散)
黄梨 半粒(我用Pineapple Josapine,去皮切小块,净重约150克)
葡萄干 1/4杯
炸腰果 1/4杯
疯柑叶 2叶(切幼丝)
朝天椒 1条(切圈)
蒜头 1瓣 (剁碎)
葱头 1粒(切片)
青葱1棵(切粒)
鸡蛋 1颗(打散)
即煮冬荫酱/冬炎酱 1 1/2汤匙(我的冬荫酱是有带咸味的,所以我没再添加任何盐或鱼露调味)[Instant Tom Yum Paste]


做法:
1. 烧热平底锅,将少许油加入锅内,爆香蒜头和葱头,然后加入冬荫酱和朝天椒炒香。















2. 把饭加入拌炒至均匀,将饭推去锅的一边,倒入蛋液,待蛋液半熟时,将蛋弄散然后和饭快速翻炒,之后加入黄梨和疯柑叶拌炒一下。
















3. 最后将腰果,葡萄和青葱,快速拌炒一下即可盛碟。

    1. Instant Tom Yum Paste wor? 很多人喜欢拿来煮冬炎汤底的火锅。颜色是好不过腰果黑过隆。:-P

  4. yum! you know sometimes when i have leftover kaffir leaves and dont know what to do with them , i will
    throw the leaves into the bath tub for bathing :)
