Yellow Noodle #2 - 嘛嘛炒面 Indian Fried Noodles | Mee Goreng Mamak

大学毕业后一班同学们各散东西,有的前往邻国发展,有的就去了首都发展,而我就选择了回到巴生工作,这么一来就可以和家人同住,也有更多的时间相处。我工作的地点就在巴生俗称小印度的地方,街上大多数的商店都是由印度友族经营的,沿路有不少卖着充满印度特色的服饰、纱丽、首饰和纺织品的商店,除了这些当然也少不了一些买印度美食的档口和餐厅。


虽然那里有不少印度餐厅,不过我最常光顾的就是嘛嘛档(Gerai Mamak)了。每当到了工作繁忙的高峰期,大多数都会和同事们一起加班,加完班后就回到嘛嘛档,聊聊天喝杯茶,吃完晚餐才回家 。如果有去打包嘛嘛炒面的话我都很喜欢站在那里看,喜欢看那位安哥以熟练的手法两三子就把面给炒好。工作几年后我就和老公结婚了,搬到首都后也没有什么机会再去嘛嘛档了,所以这几年来如果嘴馋想要吃嘛嘛炒面的话都是在家里自己炒。其实不同的嘛嘛档炒出来的面味道也很不同,有些偏辣,有些偏咸或偏甜,而且每档加入的配料也有些不同,不过最普遍的都是加入番茄,豆干,包菜,菜心和鸡蛋。其实如果是在家自己炒的话,配料方面是很随意的,可以加些自己喜欢的配料,那天我就在家炒了盘嘛嘛炒面当午餐,然后再准备了一杯Teh O Ais Limau ,在家享受嘛嘛档风味的美食!




























嘛嘛炒面 

材料:
黄面 200克
红葱头 2粒(切片)
蒜头 2瓣(切碎)
鸡蛋 1粒
洋葱 1/2粒(切片)
鸡胸肉 50克(切片)
鱼饼 50克(切片)
豆干 1块(切块)
番茄 1粒(切瓣)
菜心 2棵(切1寸段)
中型马铃薯 1粒(去皮,煮熟后切片)

调味料:
酱油 1汤匙
甜酱油 1茶匙
黑酱油 2茶匙
水 1汤匙
番茄酱 1汤匙
辣椒糊 1汤匙

装饰:
酥脆炸葱 2汤匙
红辣椒 1条(切片)
桔子 2粒(切半)
生菜 2叶(切丝)


做法:
1. 加入2汤匙的油在平底锅里,以中火烧热。放入红葱头和蒜头爆香。

2. 把鸡胸肉和鱼饼加入,炒至鸡肉变白。加入黄面,菜心,豆干,番茄,马铃薯和调味料,拌炒至均匀。

3. 将面拨开,在中间拨出一个空间,加入1/2汤匙的油,然后打入一粒鸡蛋,搅拌蛋液直到几乎熟了即可拌入面,一起炒至均匀即可。

4. 把面盛入盘子里,以酥脆炸葱,生菜丝和红辣椒装饰。食用前挤上桔子汁即可。


份量:1-2人份




Indian Fried Noodles | Mee Goreng Mamak

Ingredients:
200 g yellow noodles
2 shallots, sliced
1 clove garlic, minced
1 egg
1/2 onion, sliced
50 g chicken breast, sliced
50 g fish cakes, sliced
1 piece hard bean curd, cut into pieces
1 tomato, cut into wedges
2 stalks Choy Sum,cut into 1" sections
1 medium potato,  peeled, boiled, and sliced

Seasoning:
1 tbsp soy sauce
1 tsp sweet soy sauce (kecap manis)
2 tsp dark soy sauce
1 tbsp water
1 tbsp tomato ketchup
1 tbsp chili paste (cili boh)

For garnish:
2 tbsp crispy fried shallot
1 red chili, sliced
2 Calamansi limes, cut into halves
2 leaves lettuce, shredded

Methods:
1. Heat 2 tbsp of oil in a pan over medium heat. Add shallots and garlics, saute until fragrant.

2. Add chicken breast strips and fish cake, stir fry till the meats turn white. Add yellow noodles, Choy Sum, onion, bean curd, tomato, potato and seasoning. Stir fry until mix well.

3.Spread out the noodles and make a well in the centre. Add 1/2 tbsp of oil, then crack in an egg. Scramble the egg until almost cooked, then stir to mix well with noodles.

4. Transfer the noodles to serving plates. Garnish with crispy fried shallot, shredded lettuce and sliced red chili. Squeeze the lime juice over the noodles before eating.


Servings: 1-2
