Glass Noodles #1 - 泰式海鲜冬粉沙拉 Thai Glass Noodles Salad with Seafood | Yum Woon Sen

一转眼就到了2015年,与家人过完了几天的假期后爱心厨房也该开炉煮食了。这个月小拇指的主题是面食,非常合我意,因为我是面食控,凡是面食我都爱吃,从热的到冷的面食我都爱,可说是无面不欢。作为2015年第一道上的菜我选择了泰式海鲜冬粉沙拉,酸酸辣辣的味道令人胃口大开,吃完这道凉拌菜后,就可以接着吃各式各样的面食料理。


这沙拉的调味酱汁酸辣中带点咸,鲜和咸味主要是来自鱼露,辣当然是来自指天椒,而青柠味道除了酸之外还带股独特的香气。第二次做这沙拉时青柠只剩一粒,所以只好用柠檬来代替,虽然酸味是有,不过总感觉缺少了些香气,如果可以的话还是选择用青柠会比较好。冬粉吸收了酸辣酱汁,入口爽滑弹牙,搭配上爽脆清新的芹菜,鲜美的虾和墨鱼,还有那烤得香脆的花生,让这沙拉吃起来的口感丰富极了!如果你也喜欢吃酸辣的食物,那你就别错过这道简单的凉拌菜哦!

























泰式海鲜冬粉沙拉

材料:
冬粉 60克
中虾 4只(去壳去肠泥,保留虾尾)
中型墨鱼 1只(去内脏,切花,然后切块状)
红葱头 3粒(切薄片)
樱桃番茄 4粒(切半)
芹菜 1根(切1寸段)
烤香花生 1/3杯(切碎)
薄荷叶 适量(装饰用)

调味酱汁:
鱼露 3汤匙
青柠汁 3汤匙
糖 1汤匙
指天椒 3条(切圈)

做法:
1. 将冬粉用水浸泡大约10分钟,沥干水份,备用。

2. 把调味酱汁的材料放入一个小碗里,搅拌至糖完全溶化。

3. 煮滚一锅水,加入虾和墨鱼煮至熟,捞起备用。

4. 在同一锅水里加入冬粉,煮大约1分钟或至熟,捞起备用。

5. 在一个大碗里混合冬粉,海鲜,樱桃番茄,芹菜,红葱头和调味酱汁,搅拌均匀,放入冰箱冷藏30分钟。把沙拉盛入碗里,撒上花生碎,以薄荷叶装饰,即可享用。


份量:2人份




Thai Glass Noodles Salad with Seafood | Yum Woon Sen

Ingredients:
60g glass noodles
4 medium-sized prawns, deveined and shelled but leave tails intact
1 medium-sized squid, cleaned and scored, then cut into pieces
3 shallots, thinly sliced
4 cherry tomatoes, halved
1 stalk Chinese celery, cut into 1" section
1/3 cup roasted peanuts, chopped
Some mint leaves, for garnish

Dressing:
3 tbsp fish sauce
3 tbsp lime juice
1 tbsp sugar
3 bird's eye chili, chopped

Method:
1. Soak the glass noodles in water for 10 minutes, drain and set aside.

2. Mix the dressing ingredients in a small bowl. Stir till the sugar has dissolved.

3. Bring a pot of water to boil. Add prawns and squid, cook till just done. Drain and set side.

4. Using the same pot of water cook the glass noodle for about 1 minutes or until just done.

5. In a mixing bowl, mix glass noodles, seafood, cherry tomatoes, Chinese celery and shallots with the dressing. Toss well. Chill in the refrigerator for 30 minutes. Transfer the salad to serving bowl and sprinkle with some chopped roasted peanuts. Garnish with some mint leaves and serve immediately.

    1. 好!没问题。我也不清楚是不是日本筷子,不过这筷子和筷子垫、酱碟还有汤匙都是手绘和风的花卉。
