Yellow Noodles #4 - 甘香炒面 Fried Noodles in Kam Heong Style

相信很多人都喜欢吃甘香啦啦,甘香鸡,甘香螃蟹吧!那甘香炒面呢,不知道大家有没有吃过?当我看到甘香炒面的食谱时也觉得很新奇,将甘香酱拿来炒面想必一定很香吧!我自己试过后就觉得很不错,炒面混合了咖哩叶和香茅的香味,吃起来带点微辣,而且加了虾米让面带点咸香味。


甘香炒面我煮了两次,之前那一次是试另一个食谱,当时用的是粗黄面,甘香的调味料和现在这个食谱有少许不同,不过可能我拿捏不好,炒出来的面死咸,唉,也没有办法,结果整盘面也是照样要吃完。这次炒面加调味料时我就比较谨慎了,不敢将调味料一次过加完,一面炒一面试味,结果味道还不错。






















甘香炒面

(食谱参考最好吃的面,pg.31,做一些更改)

材料:
黄面 200克
蒜头 3瓣(切碎)
红葱头 3粒(切片)
香茅 1支(切碎)
咖哩叶 3支(取叶子而已)
虾米 1汤匙(用水稍微冲洗)
中虾 4只(去壳去肠泥,保留虾尾)
墨鱼 50克(切圈)
猪肉 50克(切片)
包菜 80克(切成小块)
猪油 1汤匙
猪油渣 1汤匙

调味料:
酱油 1汤匙
肉类咖哩粉 1/2汤匙
叁巴辣椒酱 1/2汤匙
浓黑酱油 1/2汤匙
清水 1杯

做法:
1. 加入1汤匙的猪油在平底锅里,以中火烧热。放入蒜头、红葱头、香茅、咖哩叶和虾米爆香。

2. 把猪肉加入,拌炒一下,接着再加入虾和墨鱼,炒至接近熟即可加入黄面、包菜和调味料,以大火煮至滚,炒至酱汁浓稠后即可拌入猪油渣,然后熄火。将面盛碟,乘热享用。




Fried Noodles in Kam Heong Style

(Recipe adapted from Tasty Noodles, pg. 31, with some adjustments)

Ingredients:
200 g yellow noodles
3 cloves garlic, minced
3 shallots, sliced
1 stalk lemongrass, finely chopped
3 sprigs curry leaves, use only the leaves
1 tbsp dried shrimp, rinsed
4 medium prawn , deveined and shelled but leave tails intact
50g squid, cut into rings
50 g pork, sliced
80 g cabbage, cut into small pieces
1 tbsp pork lard
1 tbsp crispy pork lard

Seasoning:
1 tbsp soy sauce
1/2 tbsp meat curry powder
1/2 tbsp Sambal chilli
1/2 tbsp thick caramel soy sauce
1 cup water

Methods:
1. Heat 1 tbsp of lard in a pan over medium heat. Add garlic, shallots, lemongrass, curry leaves and dried shrimp, saute till fragrant.

2. Add pork, stir fry for awhile. Then add prawns and squid, stir fry the seafood till almost cooked. Add yellow noodles, cabbage and seasoning. Bring the mixture to boil over high heat and stir fry the noodles until the sauce is thickened. Add crispy pork lard then turn off the heat. Transfer the noodles to serving plate and serve immediately.


Servings: 1-2
