脆炸酿油条 Crispy Fried Stuffed You Tiao

今天再分享另一个炸的点心,脆炸酿油条,这也是星期五点心晚餐的其中一款点心。这款点心也是很容易准备,跟脆炸烟肉卷的做法差不多一样,不一样的是内馅有少许不同,烟肉卷是加入鱼胶和猪肉,而酿油条是加入鱼胶和虾肉。内馅里面的虾肉我是切丁状,吃起来会比较有口感和弹牙。


现在的点心茶楼推出的点心都比较新款,这也是为了符合市场的需要和大众的口味,就连一些小吃也被列进点心餐单里,让顾客多了些选择,这炸酿油条就是其中一款。炸得脆脆香香的酿油条,无论是当点心、小吃或晚餐菜肴之一都很不错,就连我自己也很爱吃,一下子就可以清完一小碟。





































脆炸酿油条

材料:
油条 3 1/2对
鱼胶 150克
去壳虾肉 200克(去肠泥,切丁)
马蹄 30克(切碎)
红萝卜 20克(切碎)
葱花 1 1/2汤匙
白芝麻 少许

调味料:
麻油 1 1/2汤匙
黄糖 3/4茶匙
粟粉 1 1/2汤匙
白胡椒粉 1/8茶匙
蛋白 1 1/2汤匙

蘸酱:
美乃滋 适量
辣椒酱 适量

做法:
1. 将油条分开切半,然后用厨房剪刀将油条剪开,备用。
2. 在一个大碗里加入鱼胶、虾肉、马蹄、红萝卜、葱花和调味料。用清洁的手将材料搅拌,往同一个方向搅拌数分钟直到馅料搅至有粘性及均匀。
3. 将馅料分成10份。把馅料酿入油条内,一直重复做法直到酿完所有油条,然后在馅料表面撒上少许芝麻。
4. 把酿好的油条放入热油锅中炸至金黄色,馅料那一面朝下。或者可以用空气炸锅,以180°C炸8至10分钟,馅料那一面朝上。
5. 把酿油条切成小块,然后排盘,伴与蘸酱乘热享用。









Crispy Fried Stuffed You Tiao

Ingredients:
3 1/2 pairs chinese crullers / You Tiao
150 g fish paste
200 g shelled prawn, deveined and diced
30 g water chestnut, finely chopped
20 g carrot, finely chopped
1 1/2 tbsp chopped spring onion
Some sesame seeds

Seasoning:
1 1/2 tbsp sesame oil
3/4 tsp brown sugar
1 1/2 tbsp cornstarch
1/8 tsp white pepper powder
1 1/2 tbsp egg white

Dipping Sauce:
Some mayonnaise
Some chilli sauce

Methods:
1. Split the cruller pairs into individual crullers, then cut each crullers into half. Using a pair of kitchen scissors, snip open the cullers lengthwise. Set aside until ready to use.

2. In a mixing bowl, add fish paste, prawn, water chestnut, carrot, chopped spring onion and seasoning. Mix the ingredients using your clean hands in one direction for few minutes until it becomes sticky and well mix.

3. Divide the filling to 10 portions. Stuff the filling mixture into the crullers. Repeat until all crullers are used up. Sprinkle some sesame seeds on top of the filling.

4. Deep fry the stuffed crullers in hot oil until golden brown, place the stuffing side down first. Alternatively, you can air fry at 180°C for 8-10 minutes, place the stuffing side up.

5. Cut the fried stuffed crullers into bite sizes and arrange it on the serving plates. Serve hot with dipping sauce.
