之前参考了几个豉汁凤爪的煮法,一些会将酱汁煮好,然后把鸡脚浸泡在酱汁里吸收味道,入味后就将鸡脚捞起,拌入薯粉或粟粉,然后再放入锅蒸。我在焖煮好豉汁凤爪后就用了几个鸡脚来做试验,用粟粉拌一拌后才蒸,这样吃起来很特别,QQ的,好像有很多的胶质,口感跟点心茶楼吃起来的很像,不过我却嫌需要用到太多的粟粉,最后就简简单单地勾个芡就好了。
鸡脚有丰富的胶质,对皮肤和美颜都很好,而且相信鸡脚是很多人的最爱,不过如果在外面吮鸡脚的话又有点尴尬,所以自己在家煮,即不怕尴尬,也可以吃得很自在。豉汁凤爪里的豆豉酱汁味道很香,而且很下饭,除了可以当点心餐的点心之一,用来当晚餐菜肴之一也不错。
上星期的点心晚餐,有豉汁凤爪、腊味萝卜糕、 脆炸酿油条和脆炸烟肉, 还有辣椒虾米炒米粉和蚝油小白菜(没在照片里)。 |

豉汁凤爪
材料:
炸鸡脚 16个
清水 1公升
姜 2片
蒜茸 2汤匙
豆豉 1 1/2汤匙
辣豆瓣酱 2茶匙
调味料:
老抽/黑酱油 1/2汤匙
蚝油 1汤匙
麻油 1/2汤匙
绍兴酒 1汤匙
白胡椒粉 1/4茶匙
黄糖 1 1/2汤匙
芡汁:
粟粉 1汤匙
清水 3汤匙
装饰:
红辣椒圈 适量
葱花 适量
做法:
1. 加入2汤匙的油在锅里,以中火烧热,加入姜片和蒜茸爆香。然后再加入豆豉和辣豆瓣酱,继续炒大约1-2分钟直到有香味。
2. 把鸡脚加入,拌炒大约1分钟。加入调味料和清水,以大火煮滚,然后再转至小火,加盖焖煮2小时或至鸡脚焖软为止。如需要时可加入适量的热水。
3. 调至大火,倒入适量的芡汁,搅拌均匀,将酱汁煮至浓稠即可。
4. 将煮好的鸡脚装入小碟子里,放入竹蒸笼以大火蒸10分钟即可,乘热享用。
Braised Chicken Feet in Black Bean Sauce
Ingredients:
16 deep fried chicken feet
1 litres water
2 slices of ginger
2 tbsp minced garlic
1 1/2 tbsp fermented black bean
2 tsp chilli bean sauce (Dou Ban Jiang)
2 tbsp minced garlic
1 1/2 tbsp fermented black bean
2 tsp chilli bean sauce (Dou Ban Jiang)
Seasoning:
1/2 tbsp dark soy sauce
1 tbsp oyster sauce
1/2 tbsp sesame oil
1 tbsp Shao Xing wine
1/4 tsp white pepper powder
1 1/2 tbsp brown sugar
For thickening:
1 tbsp cornstarch
3 tbsp water
(Combine and stir until no lumps remain)
For garnishing:
Some chopped red chillies
Some chopped spring onion
1. Heat 2 tbsp oil in a pot over medium heat. Add ginger and garlic, saute till fragrant. Then add
fermented black bean and chilli bean sauce, continue to saute for another 1-2 minutes until fragrant.
2. Add chicken feet, stir fry for about 1 minute. Add seasoning and water. Bring to a boil then cover with lid and cook over low heat for about 2 hours or until the chicken feet are tender. Add some hot water as needed.
3. Turn to high heat, then pour in the cornstarch slurry, stir well and cook until the sauce is thicken.
4. Transfer the chicken feet to small plates. Place in bamboo steamer basket, steam over high heat for 10 minutes. Serve hot.
