腌青辣椒 Pickled Green Chillies

每次新年前爸爸和妈妈都会准备一些沾酱,一般都是准备姜蒜辣椒酱和腌青辣椒。向来我都很爱吃腌青辣椒,尤其是吃云吞面时,最喜欢加多些来伴着吃。不过现在的熟食档口都是将腌青辣椒放在酱碟里,随食物一起送上,想要添加多一些都很难。前些日子准备了一些面食都是要伴着腌青辣椒一起吃的,虽然超市里也有售卖腌青辣椒,不过总是觉得自己做的会吃得比较安心,也可以乘此机会将父母的食谱给学起来。打个电话向妈妈问了做法,买好材料就开始腌青辣椒了,自家的腌青辣椒想吃几多都没问题,绝对没有人会限制!






以前面档的青辣椒都是用豆酱的罐子装着的,
刚好家里有一个,所以我就用同一款罐子来装。


















腌青辣椒

材料:
青辣椒 200克
指天椒 3条
盐 1汤匙
糖 1/4杯
白米醋 1/2杯
滚水 适量

做法:
1. 把青辣椒洗净沥干然后斜切片,放入筛子里将种子筛掉,然后加入1汤匙的盐腌制5分钟。将滚水淋于青辣椒上,然后沥干待凉。
2. 将白米醋和糖倒入干净的玻璃罐子里,然后把青辣椒合指天椒装入罐子,盖紧收入冰箱冷藏,3-4小时后就可以食用了。




Pickled Green Chillies

Ingredients:
200 g green chillies
3 bird's eye chillies
1 tbsp salt
1/4 cup sugar
1/2 cup white rice vinegar
Some boiling water

Methods:
1. Rinse and drain the green chillies. Thinly slice the green chillies and place it in a plastic colander, then remove the seeds. Mix the green chillies with 1 tbsp of salt and leave it to sit for 5 minutes. Pour the boiling water over the green chillies and drain well.
2. In a clean jar, combine white rice vinegar and sugar. Add green chillies and bird's eye chillies. Cover the jar and store it in the refrigerator. The pickled green chillies will be ready in 3-4 hours.
