西洋菜排骨汤 Watercress and Pork Rib Soup

好久没喝汤了,前天去超市时顺手买了一把西洋菜,打算煲一煲汤。昨晚摇了个电话给妈妈,确定材料和方法后就趁小宝贝睡觉时下厨房准备材料,今晚老公回来时就有爱心汤喝。






自己煮的汤可以安心地喝,不必担心有味精。
只用少许盐来调味,这样就可以喝出食材的原味。



加了一粒蜜枣让汤甜一些。


煲好后的西洋菜颜色由鲜艳的绿色变成墨绿色。


要水滚时才可下西洋菜,否则煲出来的汤会带苦味。






西洋菜排骨汤 Watercress and Pork Rib Soup

材料:
西洋菜 250克
排骨 400克
红萝卜 1条(滚刀切块)
蜜枣 1粒
去核红枣 10粒
水 2.5公升

做法:
1. 将西洋菜洗干净,然后浸泡在淡盐水里大约15分钟,冲洗干净,沥干备用。
2. 将排骨洗干净,煮一锅水,水滚后将排骨放入汆燙,去除血水和杂质,取出沥干备用。
3. 将2.5公升的水煮滚,放入排骨,红萝卜,蜜枣和红枣,煮至水再次滚后加入西洋菜,以小火煲2小时即可。煲好后加入适量的盐调味。
